1 1/2 cups water
1 cup fresh spinach
1 frozen banana

I’ve been having a lot of green smoothies for breakfast. Here’s a simple one that’s really good.

1 c. raw spinach

1 1/2 c. water

1 frozen banana

Blend and enjoy!

 

Banana “Ice Cream”

I heard about the wonders of “one ingredient ice cream” online and after getting a 10 lb bag of bananas for 99 cents  I just had to try it out! If you haven’t heard of it before. All you do is get a banana (or three!), cut it up and freeze it for 2 hours. Once it’s frozen, you just throw it into the blender for a few minutes and voila!

Creamy, delicious, and sinfully rich ice cream! After my first batch of  “plain” ice cream I decided to mix it up and add some frozen blueberries at the end. It turned out sooooo good and it’s even healthier!

Tips:

If your banana gets frozen for more than 2 hours, just leave it out for a few minutes until blending.

At first the banana doesn’t really want to blend (at least for me), just keep stirring and pushing it down and after a couple minutes it’ll start blending into the “ice cream”.

Without any additions it can taste a bit banana-y. If you don’t want that try adding other fruits, peanut butter, cocoa powder, chocolate chips, or anything else that comes to mind!

Bento 34 – Bird’s Nest Bento

Last night I was inspired by birds when I was making this bento. Birds are really cool, so I thought it would be nice to make a little nest of my own. I had some alfalfa sprouts that need to be finished off, so I used them to make the nest and then cut some baby carrots in half to make the “eggs”. I think it turned out cute. I put some vegan ranch dressing in a little piggy sauce container to eat with the veggie nest.
Then I found some kiwi and bananas in the fridge and had to put them in the bento because they’re some of my favorite fruits. Kiwi and banana is a good combo too. For the main dish, I decided I would have some kimchi potstickers, but as I was making my bento I forgot and got out a bunch of food for tortilla wraps. Then I remembered about the potstickers, so I made a little of both.
I’m really happy with how the wraps came out and will definitely make them again. I got a tortilla and put a layer of plain soy yogurt on it. Then I sliced up some avocado and cherry tomatoes and lined them up in there. Then I added some of the vegan ranch and some tobasco sauce… delish!

Soy Protein Shake

Some have been wondering, if I make such good food for lunch and dinner, what do I have for breakfast? Well almost every day I have a soy protein shake. They are wonderfully delicious and nutritious. I use Whole Foods brand Soy Protein Shake in both chocolate and vanilla flavors. First I add some vanilla soy milk, then a banana broken into pieces, then half a scoop each of the chocolate and vanilla shake mix and blend well. Today I had some strawberries that needed to be eaten, so I threw a couple of those in there too.
