Bento 45

This was an easy leftover bento that I made. It has pinto beans and a half of a bell pepper stuffed with wild rice and a little bit of cheese. Plus a little Baybel cheese as a snack.

Breakfast Potato Pita Pocket

I love breakfast and using leftovers in unique and yummy ways, so I was thrilled when I put together this awesome breakfast wrap using left over mashed potatoes and pita pockets that needed to be eaten.

To make it I heated up some leftover mashed potatoes in a skillet. Then got a couple eggs broken up in a bowl and added a bit of salsa. Once the potatoes were warm I added the egg mixture to the potatoes and stirred until the eggs were cooked. I stuffed that into some warm pitas and topped with some scotch bonnet hot sauce and it was ready to eat!

I made this bento the other day for work. It’s nothing special but I thought I’d post it anyway since it’s been so long since I posted one.

I made this bento a couple days ago, but I’ve been super busy lately and haven’t gotten a chance to post it yet. I had some vegan mac and cheese, corn on the cob, and greenbeans leftover from dinner, so this bento was a breeze to put together. I had some edamame in pods that I didn’t eat from the bento the day before too and didn’t want to trow them away, so I popped the beans out out the shell on top of my mac and cheese. Then I cup the corn off the cob and added that along with the green beans to my bento. All I had to do after that was cut up some strawberries and I was done.

Although this bento was ludicrously easy to make, it was also ludicrously yummy!

Using Leftovers Pt. 1 – Vegetable Fajita Calzone

Continuing with the reducing waste theme, I used some leftover grilled vegetables and black beans to make a fajita style calzone for dinner and here’s how I did it.

First make a simple pizza dough.

Spray a baking sheet with cooking spray and roll out into a square shape.

Get your leftover grilled vegetables out and chop them up.

Bake at 350 degrees for 35 minutes or until the dough is lightly browned.

This turned out to be a great dinner for tonight. I was tired of fajita tacos and there were tonnes of vegetables left so this was a nice change but also helped use up some of the veggies. I also have made a Mexican style calzone before by cooking up some onion, bell pepper, whole black beans, corn and garlic and sticking that into the pizza dough. I really enjoy that recipe, so it kind of inspired this one.

I had my 21st birthday this weekend, so I didn’t have time to make any bentos, but today I needed one for lunch. I used some leftovers from last night (as usual) and made a fruit salad to go with it. I also found some Smart Dogs hiding in the freezer, so I thawed those out and fried one up. Then I cut it into a little octopus (quadpus?). I think the fried part looks like the texture of an octopus too.

On the right there’s mashed potatoes, peas, garlic bread and a smart dog. On the left there’s a fruit salad with grapes, cantaloupe, and strawberries. There’s also a little container with raw almonds.

Here’s the bento I made last night for my lunch today. I used some leftovers from dinner and then made a fruit salad to accompany it. I added some furikake that I found that is vegan on the noodles and put some baby lima beans and cut some corn off the cob from dinner. For the fruit salad, I used some fresh strawberries and cantaloupe and put some dried fruit and raw almonds in a baking cup. Raw almonds are so good, when I went to the store the other day I had to get some to go with the dried fruit.
